Grilled Chicken with Italian Salsa
Suggested Serving with Bella Terrazza Vineyards Pinot Grigio

Notes:
Use those tomatoes and herbs from your garden! Here's another easy dinner for summer.

Salsa:
2 1/4 cups chopped tomatoes (about 2 medium)
1/2 cup chopped fresh basil
1 T. thawed orange juice concentrate
1/2 tsp. salt
1/2 tsp. minced fresh garlic
1/2 tsp. balsamic vinegar
1/4 tsp. freshly ground black pepper

Chicken:

1 T. chopped fresh oregano
2 T. fresh lemon juice
2 T. balsamic vinegar
1 T. olive oil
1 T. Dijon mustard
1 tsp. chopped fresh parsley
1/2 tsp. garlic powder
1/2 tsp. chopped fresh thyme
1/2 tsp. freshly ground black pepper
1/4 tsp. salt
4 boneless, skinless chicken breasts

 

1. Combine oregano and next 10 ingredients (through salt) in a zip-lock bag; add chicken to bag. Marinate in refrigerator for 1 hour.

2. Prepare salsa by combining first 7 ingredients in a bowl; cover and chill 1 hour.

3. Preheat grill.

4. Remove chicken from bag; discard marinade. Grill 6 minutes on each side or until chicken is done. Serve with salsa.

Yield: 4 servings: 293 calories, 9.5 g. fat, 633 mg sodium
